Ricotta Workshop: Ravioli and Ice Cream

Curious about making cheese, but don’t know where to begin? That’s easy—ricotta! Start by boiling milk, gently stir to separate curds from whey, strain through cheesecloth and you’re done. We’ll mix and roll pasta dough while our cheese drains, then fill ravioli with ricotta and fresh herbs. And we haven’t forgotten dessert—think ricotta ice cream with raspberry sauce.
